Clouds and mist are one of the top ten Chinese teas that is also called forest tea. China produces several teas that use the name cloud and mist. Chinese teas that share this name have many common characteristics that make them different from other green teas. This particular tea is named from the cloudy, humid mountains on which they are grown. The cooler climate causes the tea plants to grow more slowly that gives them their distinctive flavor. This particular cloud and mist tea is grown in the steep, dew-laden mountains of Fujian- Drum Mountain. Most sunsets find the mountain covered in fog and dew coating the plants to keep them cool throughout the night. The tea has become increasingly rare since the plants grow very slowly and produce only a small yield. The tea plants grow mostly wild and are harvested by the local mountaineers. The plants compete for sunlight, so they are a naturally grown shade tree in which the leaves produce a high concentration of chlorophyll that gives the tea a rich taste with a touch of sweetness.
