Nothing is better on a hot summer day than a big glass of iced tea. When brewed from fresh, loose tea the aroma fills the air and one can't wait for that first cooling sip. Add some fresh fruit or herbs to the brew and you have a special summer treat that is perfect for every occasion.

How to Make Great Ice Tea- Makes 8 cups

Bring 4 cups of water to a boil and remove from heat.

Add 3 tablespoons of loose leaf tea.

Brew the leaves for 4 minutes (5 for a stronger brew)

Strain and pour the hot tea over 4 cups of ice into a pitcher.

Chill.

Sweeten as desired- adding fresh fruit and or fresh herbs like lemon balm or peppermint makes a delicious tea

 

For added convenience place the loose leaf tea in a T-Sac or try a Bodum Ice Tea Jug that has an infuser and fits perfectly in most refrigerators.

Ice tea is America's favorite way to enjoy tea. Properly brewing the tea is as important as selecting the proper loose leaf tea to brew. Most black tea are good iced. Darjeeling teas are excellent hot, but do not ice very well. Ceylon and Assam teas are better choices. Selecting a good green tea to ice may take some patients. Light tasting green teas do not ice very well. This also applies to white teas. They are too delicate and all flavor is lost during the brewing to ice process. Add some fresh fruit and herbs to your ice tea to enhance the flavor or try one of the recipes above.
