Salads

Delicious and flavorful salads to serve at a formal or informal tea.

Apple and Red Onion on Romaine Salad 

1/2 cup vegetable oil

1/4 apple cider vinegar

4 tablespoons frozen apple juice concentrate, thawed

1 tsp salt

1/2 tsp ground nutmeg

1/2 tsp ground ginger

1/4 tsp ground black pepper

 

1 cup thinly sliced red onion

2 golden delicious apples

hearts of romaine lettuce

1/2 cup walnuts, coarsely chopped

 

Whisk the first 7 ingredients in a medium bowl for the dressing. Refrigerate and whisk again before using.

 

Place the sliced onions in a bowl and cover with cold water and allow to stand for 30 minutes.

Drain and set aside.

 

Place 1/3 cup of dressing in a bowl. Add the apples and toss to coat.

 

Cover a platter with the romaine leaves with the top of the leaves facing out. (You may want to place the romaine leaves on individual serving plates). Top the leaves with the red onion slices. Drizzle with the dressing, then spread the apples on the onions and sprinkle with the walnuts.

 

Makes 8 servings.
