Mixed Green Salad

Delicious and flavorful salads to serve at a formal or informal tea.

Mixed Greens with Pecans, Feta, and Dried Cranberries

1/4 cup red wine vinegar

1 Tablespoon Dijon mustard

1 tsp dried thyme

3/4 cup olive oil

2 5-ounce bags of mixed salad greens

1 1/2 cups dried cranberries

1 small red onion; sliced thin

1 1/2 cups pecans

1 1/4 cups feta

 

Whisk vinegar, mustard, and thyme in a small bowl. Gradually whisk in the olive oil. Season with salt and pepper to taste.

 

Place mixed salad greens on a serving platter or individual plates. Layer red onion rings on the lettuce, sprinkle cranberries over the onions, pecans next and then the feta cheese.

 

At serving time lightly sprinkle on the dressing.
