Salads

Delicious and flavorful salads to serve at a formal or informal tea.

Strawberry and Mozzarella Salad

1 lb stemmed and sliced strawberries
1 ½ lb. fresh mozzarella cheese slices, 1/2 inch thick
2 T cup Balsamic vinegar
basil, slivered (roll several leaves lengthwise very tight; slice through the leaves as thinly as possible to make long slivers)

For each plate:

Mix the sliced strawberries and the balsamic vinegar in a bowl and set aside.
Place 4 or more mozzarella slices; overlapping on each plate. Spoon the sliced strawberries around the cheese. Sprinkle the slivered basil on the cheese and strawberries.

Yield: 6 servings
