Chicken and Watercress Sandwich

1/2 cup finely chopped cooked chicken

1/4 cup chopped walnuts

2 tablespoons finely chopped water chestnuts

2-3 tablespoons mayonnaise

1-1/2 teaspoons chopped green onions

1 teaspoon soy sauce

pumpernickel bread

red grapes

watercress

 

Stir together the first 6 ingredients.

Using a 2 inch round cookie cutter, press out 24 circles.

Spread each bread round with a small amount of chicken mixture.

Garnish with grapes and watercress.

 

Makes 12 sandwiches
