Tea Sandwiches

To make these dainty sandwiches, purchase very thinly sliced bread and freeze an hour or two before handling.  Keep fillings at room temperature for easier spreading.  Spread the filling all the way to the edges them trim and discard all the crusts.  Use a serrated blade for neat trimming and cutting. If making sandwiches in advance, lightly spread with butter to keep the bread from becoming soggy. Cut the bread with cookie cutters for different shapes. Cover with a damp cloth until ready to serve.

Cucumber Mint Sandwich

1 English cucumber

thinly sliced pumpernickel bread
mayonnaise
finely chopped mint
mint sprigs

salt to taste
ground pepper to taste

 

Cut cucumber into thin slices (as many as the number of sandwiches needed). With round cutter (about the same size as the cucumber slices) cut the same number of bread circles. Mix mayonnaise with enough chopped mint to taste. Spread on bread circles to edge. Top with cucumber slice. Garnish each with twig mint leaf and sprinkle with salt and pepper. Serve at once.

 

If making ahead of time, do not assemble until ready to serve.  The cucumber will make the bread soggy.
