Tea Sandwiches

To make these dainty sandwiches, purchase very thinly sliced bread and freeze an hour or two before handling.  Keep fillings at room temperature for easier spreading.  Spread the filling all the way to the edges them trim and discard all the crusts.  Use a serrated blade for neat trimming and cutting. If making sandwiches in advance, lightly spread with butter to keep the bread from becoming soggy. Cut the bread with cookie cutters for different shapes. Cover with a damp cloth until ready to serve.

Grilled Cheese Sandwich

3 eggs

1 teaspoon mustard

1/4 teaspoon salt

1/8 teaspoon white pepper

2 tablespoons Worcestershire sauce

3/4 pound sharp cheddar cheese, diced

4 English muffins, split and toasted
 

Preheat broiler.

Combine eggs with mustard, salt, pepper, and Worcestershire sauce in food processor.  Process until blended.  Add cheese and process to form thick paste.  Spread mixture on the muffins.  Place on baking sheet under broiler until melted and beginning to brown.  Serve hot.
 

Makes 4 servings
