Herbs de Provence Sandwich

Thinly sliced triangles of pumpernickel 

3 ounces of cream cheese

1 tsp. herbs de provence

Cherry tomatoes cut into thin slices

In a mixer, beat the cream cheese until smooth.  Stir in the Herbs de Provence.  Place the cheese in the refrigerator overnight.  The next morning, set the cheese out and allow it to come to room temperature.  Spread the bread with a thin layer of the cheese, and top with slices of cherry tomatoes.  Cut the sandwiches diagonally to serve.
