Tea Sandwiches

To make these dainty sandwiches, purchase very thinly sliced bread and freeze an hour or two before handling.  Keep fillings at room temperature for easier spreading.  Spread the filling all the way to the edges them trim and discard all the crusts.  Use a serrated blade for neat trimming and cutting. If making sandwiches in advance, lightly spread with butter to keep the bread from becoming soggy. Cut the bread with cookie cutters for different shapes. Cover with a damp cloth until ready to serve.

Honey Dijon Grilled Chicken Croissant

1/4 cup Dijon mustard
2 tablespoons honey
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
1/8 teaspoon ground cayenne pepper

Sliced grilled chicken- purchased from the deli

Spinach

Red onion- thinly sliced

Swiss cheese

Croissant

 

In a small bowl, mix the Dijon mustard, honey, dried oregano, garlic powder, and cayenne pepper. Slice croissants in half lengthwise. Spread the mustard mixture on one half of the croissant. Place a slice of Swiss cheese on the bottom of the croissant, top with chicken, thin slice of onion, spinach, and top with the other croissant half. Slice the sandwich into thirds.
