Tarts

 

Tarts are quick and easy to make when the shells are purchased at your local market.  The fillings can be just about anything you have on hand.

 

Apple Tart

2 large egg yolks

6 tablespoons sugar

1 tablespoon cornstarch

1/3 cup whipping cream

1/3 cup frozen apple juice concentrate, thawed

3 tablespoons unsalted butter

3 golden delicious apples; peeled, cored, and cut into slices

Non Stick Spray

1 pre-made pie crust like Pillsbury rolled crust in the refrigerated section at room temperature

 

Preheat oven to 375 degrees

 

Whisk egg yolks, sugar, and cornstarch in a bowl. Add the whipping cream and apple juice concentrate; stir to mix.

 

Spray a glass pie plate with the non stick spray. Layer the apples on the bottom of the plate. Pour the egg filling over the apples. Unroll the crust and place on top the filled pie plate. Trim the edge of the crust to fit the pie plate.

 

Bake for 40 minutes or until apples are tender and crust is golden brown.
