Tarts

 

Tarts are quick and easy to make when the shells are purchased at your local market.  The fillings can be just about anything you have on hand.

 

Berry Custard Tart

Filling:

3 egg yolks

1/4 cup sugar

1/4 cup heavy cream

1/2 teaspoon vanilla

2 cups fresh  berries (raspberries, blueberries, blackberries)

confectioners' sugar

 

Whisk together egg yolks and sugar until smooth. Whisk in cream and vanilla and pour into prepared (bake using your favorite pie crust recipe or simply purchase pre-made shells) tart shells. Sprinkle berries over the custard and bake about 30 minutes until set, but not browned.  Cool in pan on a rack and dust with the confectioner's sugar.
